I heard Russans are especially good at salting herring. Can anybody share some personal recipes?

Here’s one in Russian:

1. селедку: Чищу pыбу от внутpенностей, отpезаю голову. Готовлю смесь: 2 ст. л. соли 1 ст. л. сахаpа Кто любит, можно добавить специи, но и так вкусно. Пеpесыпать pыбу этой смесью, сложить плотно в миску, накpыть таpелкой и поставаить гpуз. Чеpез 2 суток готова.

2. Свежую рыбку разбираю на маленькие кусочки без костей, все складываю в банку и заливаю рассолом. Затем эту банку ставлю в холодильник на 2-3 дня, От этой селедочки пить не хочется, что радует. Рассол - на 1 л воды кладем соли 100 гр, сахара 2 ст.л., перец, лаврушка, гвоздика, тмин, укроп. Прокипятить, охладить и залить. Если часть воды заменить винцом, то и результат будет не менее приятный. Любители могут добавить лук в раствор еще до тепловой стадии.

In our family we usually cook it in a very simple way. Like most of the people, we buy salted herring is a shop. Usually it’s a huge barrel with a lot of herrings in it - just fish, salt and water, nothing special. Back at home, you need to cut and clean it, throw away heads, tails and all the insides together with bones.

Once you’ve cleaned the fish, you cut it into pieces and put on a plate. Then, you put on top of it a lot of onion rings and pour it with wine vinegar, with wine or with lemon juice. You can also add a little bit of nutmeg if you like it.
